For me, Cantabria means sardines. In towns like Pedrena, there are small informal beach bars called chiringuitos. Here I love to feast on sardines grilled over charcoal. But for many others, the great cows found all over the countryside are the symbol of this northern region—and the milk, cheese and ice cream they produce.
