While many people know this region because of the annual running of the bulls in Pamplona, for me it is the sweet, hand-roasted red piquillo peppers that make it so special. In our episode “Spain’s Vegetable Garden” I show you how they painstakingly roast and peel the peppers before putting them into jars bound for our grocery shelves. But no trip to Navarra would be complete without a visit to Pamplona, where the young men run with the bulls while the older men try to improve their cooking in culinary societies.
