This region, known as the Basque Country, is filled with wonderful specialties like Idiazábal cheese, fragrant Txakoli white wine, and the whimsical little snacks called pintxos. In our episode “Earth, Wine and Fire”, I will take you to rustic farms to see where the cheese-makers live. I introduce you to the great red and white wines of the region. And I show you how to cook a traditional dish of baby squid with caramelized onions.

Later this year, we will return to the Basque Country in another episode to visit with some of the chefs who have made this region, and its city of San Sebastián a culinary capital of the world.
